Selasi’s Coconut Ice Cream

Great British Bake Off 2016 competitor Selasi Gbormittah shares his ice cream recipe using 100% coconut milk paired with puree for an all-natural, guilt-free ice cream!

Selasi’s Coconut Ice Cream Recipe: Veggie

Ingredients:

655g Vita Coco coconut milk
170g sugar
87g free-range egg yolk
1 tbsp vanilla essence
finely grated zest of one lemon
337g coconut puree

method:

  • Make a custard by whisking the yolks, vanilla, zest and half of the sugar, until pale.
  • Warm the milk with the remaining sugar on a low heat.
  • Gently pour the milk mixture onto the whisked egg yolks, and bring back to the heat, making sure you’re stirring continuously (to avoid cooking the egg and creating lumps). Keep stirring until you achieve a thick custard consistency.
  • Remove from the heat and stir in the puree. Strain and cool immediately, bag and chill for 12-24 hours
  • Churn in an ice cream maker and serve.
