Sicilian Lentil Pasta
Serves: 2
This tasty recipe is a great midweek meal go-to. Quick, easy and packed with goodness.
Ingredients:
250g spaghetti2 garlic cloves, crushed
1 400g tin brown lentils
1 tsp chilli powder
1 onion, finely chopped
1 celery stick, finely chopped
1 tbsp, tomato paste
1/2 aubergine, cubed
1 tin chopped tomatoes
1 tsp olive oil
handful parsley, chopped
pinch of vegetarian Parmesan-style cheese
method:
- Cook the spaghetti in salted boiling water, then set aside.
- Fry the onion and garlic in the olive oil until soft, then add the celery and aubergine. Cook for 5-10 minutes before adding the tinned tomatoes, chilli powder and tomato paste.
- Reduce the heat and simmer for a few minutes. Add the drained lentils and stir through the spaghetti. Season to taste and serve with a handful of parsley and a sprinkling of vegetarian Parmesan-style cheese.
