Spiced Apple & Amber Strudel
Serves: 4
Ready in: 30 to 60 mins
Mature Cheddar gives this apple strudel a unique twist in this indulgent and comforting dessert.
Ingredients:
4 large sheets filo pastrybutter, melted
150g Snowdonia Cheese Company Amber Mist, crumbled
4 cooking apples, peeled, cored, sliced and lightly cooked with brown sugar, until soft but not a purée
40g brown sugar
75g raisins
cinnamon
egg, beaten
method:
- Prepare the filling by mixing together the cooked apples, raisins, cinnamon and crumbled cheese.
- Layer up the sheets of pastry with melted butter between each layer. Place the filling down the centre of the pastry, making sure there is space around the sides to seal the strudel.
- Brush the edges with beaten egg, fold in the ends, then gently roll the pastry to form a big sausage shape. Gently press down and place on a baking sheet.
- Brush lightly with egg and sprinkle with cinnamon and brown sugar. Bake in a hot oven, until the pastry is crisp and golden. This is delicious served with whisky cream!
