Breakfast is the most important meal of the day, but if you're bored of the typical toast or bowl of cereal, then jazz up your morning meal with this warming, hearty bowl of vegan porridge. It takes only 10 minutes to make, and is a healthy way to start the day. Sweet Pink Lady apples add a crisp crunch to the porridge, whilst the mixed seeds provide an extra health boost. The toppings are optional, but will add a lovely additional texture.
Ingredients:
500ml soya milk (almond will also work well)85g porridge oats
1 Pink Lady apple
1 tbsp mixed seeds
1 tbsp coconut sugar (optional)
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
pinch cloves Toppings (optional)
1 Pink Lady apple, thinly sliced
mixed seeds
maple syrup
method:
- To make the porridge, core and chop the apple and add to a pan along with the rest of the porridge ingredients.
- Bring to a simmer and cook over a medium heat for 5-7 minutes, until the porridge is thick and creamy.
- Pour into two bowls and top each bowl with some apple slices, a sprinkle of seeds, a dash of maple syrup and a drizzle of cashew nut butter.
