Spinach Falafel Skewers

These hearty vegan skewers would make an ideal light meal accompanied by a refreshing salad. Recipe and image courtesy of waitrose.com
Ingredients:
260g pack spinach2 x 400g tins chickpeas, drained and rinsed
2 garlic cloves
75g plain flour
bunch spring onions, roughly chopped
1 tbsp ground cumin
½ x 25g pack fresh mint, leaves only
oil for shallow frying
method:
- Place the spinach in a large bowl and cover with clingfilm. Microwave on high for two minutes until wilted, then cool and squeeze out the excess liquid. Place in a food processor with the remaining falafel ingredients. Process until it forms a coarse paste, then season well.
- Divide the mix into 24, and with damp hands, roll into balls. Chill for 30 minutes.
- Heat a little oil in a large frying pan and fry the falafels in two batches for 5-6 minutes, turning occasionally, until golden.
- Thread three falafels onto each of the eight wooden skewers to serve.
