Sticky Spiced Buns

These vegan hot cross buns from @bos.kitchen are perfect for feasting on this Easter bank-holiday weekend.

Ingredients:
450g strong white flour1 tsp salt
1 tsp ground mixed spice
2 tsp cinnamon
½ tsp ground nutmeg
7g fast-action yeast
50g coconut sugar
50g vegan butter, melted
150ml dairy-free mylk
1 flax egg (1 tbsp ground flax mixed with 3 tbsp water)
1 orange, juiced and zested
70g currants
2 tbsp sugar
2 tbsp hot water
method:
- Mix the flour, salt, spices, yeast and coconut sugar together in a large bowl. Make a well in the middle and add the vegan butter, mylk, flax egg, orange juice and zest.
- Add currants and mix to a soft dough. Knead on a floured surface for 10 minutes. Pop in a warm place and allow to rise for an hour, until doubled in size.
- Divide the dough into 12 pieces and shape into buns. Make a cross in the top of each one and allow to rise for another 30 minutes. Preheat oven to 220C/425F/Gas 7 and bake for 15 minutes until golden.
- Make the glaze by mixing sugar and hot water together. Brush on top of the buns as soon as they come out of the oven
