Strawberry & Halloumi Skewers
Serves: 12
The sweetness of the strawberries combined with the earthy courgette and crisp halloumi makes for a heavenly flavour combination.
Ingredients:
400g of Jubliee Selections by Driscoll’s strawberries2 courgettes, peeled and sliced
250g pack halloumi, cut into bite-sized cubes
generous drizzle of olive oil
For the dressing
3 tbsp extra virgin olive oil1 tbsp raspberry vinegar
handful of fresh mint leaves, chopped
method:
- Mix all the dressing ingredients together, season to taste, then put to one side.
- Thread a strawberry, courgette slice and halloumi piece onto a skewer, then repeat. Continue this until all ingredients are used. Place the skewers in a shallow dish and drizzle over the olive oil - ensuring each skewer is coated - and season to taste.
- Heat a griddle pan and add the skewers a few at a time, cooking for approximately one minute on each side, or until the halloumi is crisp. When all the skewers are cooked, arrange them on a platter and drizzle over the dressing. Serve immediately.
