Super Simple Tomato Sauce

Ingredients:
675g firm ripe tomatoescrushed garlic clove
6 tbsp Filippo Berio Extra Virgin Olive Oil
1-2 tbsp shredded basil
pasta
salt and pepper
grated veggie cheese
method:
- To make four servings, skin and deseed 675g firm ripe tomatoes (tip: slice a shallow cross in the base of the fruit, pop into boiling water for 10-15 seconds, then plunge immediately into cold water for easy peeling). Cut into thin, even strips, then put in a non-metallic bowl with a crushed garlic clove, 6 tbsp Filippo Berio Extra Virgin Olive Oil and 1-2 tbsp shredded basil. Leave to marinate for 3-4 hours. When ready to use simmer for 10-12 minutes and serve with your favourite pasta, with a twist of salt and pepper and grated veggie cheese to taste. Life too short to peel a tomato? Use a drained can of tomatoes instead.
