Sweetcorn Fritters

Ingredients:
110g sweetcorn1 free-range egg white, whisked until soft peaks
110g self-raising flour
1 tbsp baking powder
1 free-range egg
1/4 pint milk
pinch of chilli flakes
55g unsalted butter
[hd]For the salsa[/hd]
1 beef tomato, chopped
2 roasted peppers, drained and chopped
1 large spring onion, finely chopped
handful fresh basil, torn
1/2 lime, juice only
1 tsp olive oil
method:
- Stir the salsa ingredients together, and leave to infuse while you cook the fritters.
- Place the sweetcorn in a food processor and blitz to form a purée. Transfer to a bowl and fold in the egg white. Mix in the flour, baking powder, egg, milk and chilli flakes to form a batter.
- Gently melt the butter in a frying pan over a medium heat. Spoon the mixture into the pan to make 4-6 fritters. Fry for 2-3 minutes on either side, until golden and crisp.
- Remove the fritters from the heat and transfer to a plate. Serve with the salsa alongside, and lots of seasonal vegetables or salad.
