Tequila, Lime, Mint and Ginger Cocktail
Serves: 4
Ready in: 30 to 60 mins
Ingredients:
8 shots of tequilajuice and zest of 1 lime
a sprig of mint
2.5cm piece fresh ginger, grated
2 tbsp caster sugar
juice and zest of 1 lemon
1/2 tsp xanthan gum
1/2 tsp agar flakes
150ml sparkling water
100ml sugar syrup (4 tbsp sugar, 2 tbsp water)
method:
- Make the lemonade foam by bringing the lemon juice and zest to a boil in a pan then whisking in the agar and xanthan gum until well dissolved.
- Leave to cool for a minute then stir in 1 tbsp sugar and slowly pour in the water. Whisk well, pour into a container and leave to set in the fridge. This will keep for a week. Before serving, blitz with a stick blender until a gel-like foam is achieved.
- Pound the ginger, mint and sugar together in the bottom of a cocktail shaker or tall glass with the bottom of a rolling pin.
- Pour in the tequila, syrup, lime juice and zest, fill up with ice, cover and shake well. Strain into ice-cold martini glasses, top with lemonade foam and serve.
