The Ultimate Vegan Hot Dog
Serves: 4
Ingredients:
For the hot dogs:
4 Linda McCartney’s Chorizo & Red Pepper Sausages1 tbsp vegetable oil
4 hot dog rolls
For the tomato salsa:
10 cherry tomatoes, halvedhandful fresh coriander
1/2 red onion, cut into fine rings
1 fresh jalapeño chilli, finely chopped
1 clove of garlic, minced
juice of 1 lime
For the guacamole:
2 avocados1 red onion, finely chopped
6 cherry tomatoes, finely chopped
1 red chilli
handful coriander, chopped
juice of 1 lime
pinch of sea salt and pepper
method:
- For the guacamole, spoon the flesh out of the avocados and into a mixing bowl. Add the rest of the guacamole ingredients, then mash the mixture until creamy and set aside. Mix all the ingredients for the tomato salsa in a separate bowl and set aside with the guacamole.
- Heat the vegetable oil in a griddle pan and cook the sausages for 10-15 minutes.
- Place the sausages in the hot dog rolls and add dollops of the guacamole and salsa. Season with salt and pepper and sprinkle with some vegan cheese (optional).
