Ingredients:
2 aubergines, cut in half and cut with criss-crossolive oil, for drizzling
1 jar Belazu Tomato and Smoked Paprika Sauce
100g vegetarian feta
1 sprig of fresh chopped mint
cooked couscous, to serve
method:
- Preheat the oven to 200C/400F/Gas 6. Place the aubergines in a baking dish and drizzle with olive oil. Roast for 30 minutes.
- Remove and spread with the jar of sauce and return to the oven for a further ten minutes. Crumble over the feta and chopped mint and serve with cooked couscous.
