Tropical Layered Chia Seed Pudding

Cost Cutting Gluten Free Quick Make Vegan Friendly
Ingredients:
21g chia seeds 10g unsweetened desiccated coconut 3 heaped tbsp natural coconut yogurt 170ml water 2 tbsp maple syrup A drop of vanilla extract 1 passion fruit 1 ripe mangomethod:
- Mix together the chia seeds, dessicated coconut, coconut milk, water, maple syrup, and vanilla extract in a bowl. Stir for a few minutes to ensure all the ingredients are well combined. Cover, and leave to thicken for at least an hour (ideally overnight).
- When the chia pudding has set, remove from the fridge. Chop the mango into chunks, and place in a bowl. Scoop out the passion fruit pulp and mix it together with the mango chunks.
- 3. In a jar or glass, place a few tablespoons of the chia pudding at the bottom. Next, add one layer of the mango and passion fruit mixture. Repeat until it’s full to the top and finish off with a sprinkle of desiccated coconut.
