We love a moist slice of banana bread alongside a cup of tea. Banana bread is also a great way to use up those over-ripe bananas so they don't go to waste! This recipe for vegan banana bread is courtesy of the FAB Flour Easy Peasy Baking campaign, launched by nabim.

Vegan Banana Bread Recipe: Veggie

Ingredients:

4 ripe bananas
75g vegetable oil
1 tsp vanilla extract
225g self-raising flour
2 tsp baking powder
100g light brown soft sugar

method:

  • Preheat the oven to 160C/325F/Gas 3. Mash three of the bananas into a measuring jug with the vegetable oil and vanilla.
  • In a mixing bowl, combine the dry ingredients. Add the wet mix to the dry mix and combine. Pour into a lined loaf tin and top with the 4th banana, halved lengthways.
  • Bake for 40-45 minutes, until golden on top and springy to touch in the centre.
