We love a moist slice of banana bread alongside a cup of tea. Banana bread is also a great way to use up those over-ripe bananas so they don't go to waste! This recipe for vegan banana bread is courtesy of the FAB Flour Easy Peasy Baking campaign, launched by nabim.
Ingredients:
4 ripe bananas75g vegetable oil
1 tsp vanilla extract
225g self-raising flour
2 tsp baking powder
100g light brown soft sugar
method:
- Preheat the oven to 160C/325F/Gas 3. Mash three of the bananas into a measuring jug with the vegetable oil and vanilla.
- In a mixing bowl, combine the dry ingredients. Add the wet mix to the dry mix and combine. Pour into a lined loaf tin and top with the 4th banana, halved lengthways.
- Bake for 40-45 minutes, until golden on top and springy to touch in the centre.
