Watercress Houmous

Ingredients:
410g cans chickpeas1 garlic clove, crushed
3 tbsp olive oil
1 tbsp tahini
juice of 1 lemon
good pinch cayenne pepper
1x 85g bag watercress, chopped
wholemeal pitta bread
method:
- Drain the chickpeas, reserving 100ml of the liquid. Put half the chickpeas and all the liquid in a food processor, add the garlic, olive oil, tahini, lemon juice, cayenne salt and freshly ground black pepper. Whizz until the mixture becomes nice and smooth.
- Add the remaining chickpeas and the watercress and whizz again on the pulse setting, until the mixture is still quite chunky.
- Serve stuffed in warm pitta bread with salad vegetables, or as a dip with toasted pitta wedges, warmed tortilla wraps or crudités.
