Wholemeal Puff Pastry Tartlet with Grilled Pepper Recipe: Veggie

Ingredients:

2 red peppers

2 sweet potatoes, peeled

1 red onion, thinly sliced

4 sheets of wholemeal puff pastry

salt and pepper

100g grated vegetarian Parmesan-style cheese

olive oil

method:

  • Heat a grill pan until very hot. Slice the pepper into strips and grill until slightly charred.
  • Roll out the sheets of puff pastry (such as Jus Rol) as thin as possible and place on a baking sheet.
  • Scatter the onion and peppers over the pastry sheets, cover with the Parmesan cheese and fold the corners into the centre.
  • Bake in the oven for about 20 mins, meanwhile, slice the sweet potatoes thinly and grill in the same way as the peppers.
  • Serve alongside the tartlets with a crisp side salad.
