Wholemeal Puff Pastry Tartlet with Grilled Pepper

Ingredients:
2 red peppers 2 sweet potatoes, peeled 1 red onion, thinly sliced 4 sheets of wholemeal puff pastry salt and pepper 100g grated vegetarian Parmesan-style cheese olive oilmethod:
- Heat a grill pan until very hot. Slice the pepper into strips and grill until slightly charred.
- Roll out the sheets of puff pastry (such as Jus Rol) as thin as possible and place on a baking sheet.
- Scatter the onion and peppers over the pastry sheets, cover with the Parmesan cheese and fold the corners into the centre.
- Bake in the oven for about 20 mins, meanwhile, slice the sweet potatoes thinly and grill in the same way as the peppers.
- Serve alongside the tartlets with a crisp side salad.
