Wild Garlic and Parsley Sausage Kebabs

Ingredients:
juice and zest of 1 orangejuice and zest of 1 lime
2 tbsp rapeseed oil
2 tbsp fresh mint, chopped
8 Quorn Wild Garlic & Parsley Sausages, cut into three diagonally
8 mixed peppers, cut into quarters
2 courgettes, thickly sliced
method:
- Combine the first four ingredients to create a marinade. Pour over the sausage pieces and leave for 30 minutes (or overnight) in the fridge.
- Thread the sausages onto the skewers alternately with the peppers and courgette.
- Brush any remaining marinade over the kebabs and barbecue for 10-12 minutes, turning frequently. Serve with salad.
